Question about sponge cake and chiffon cake

Posted by sb417 on September 15, 2004, at 1:01:00

I guess I should know the answer to this, but I don't. Do sponge cake and chiffon cake need to be refrigerated? How long will they stay fresh if I don't refrigerate them? If refrigeration is not necessary, will refrigerating the cakes spoil them?

I don't know about chiffon cake (haven't even heard of it) but in my experience, sponge cake should stay fresh for 3 to 5 days if stored in a very airtight container. Refridgeration will let the cake last longer, but it loses some of that "just baked" freshness. Popping it into the oven for a short bit may help. But doing this often will dry the cake right out. If you choose to refridgerate, do so in a very airtight container aswell.

Short answer: I'll take both...

Longer answer:

Airtight container, out of refrigerator, nice, fresh taste/texture, several days.

Airtight container, in fridge, loses that YUM factor, but stays fresh longer.

Personally, since I'm the only one in the house who eats any kind of cake (diabetic spouse), I just freeze cakes and defrost in the fridge. Then I stick 'em in the oven to warm 'em up. Maybe not as "just baked fresh", but certainly good enough to eat with enjoyment.

Hi Racer and saw.

Thanks so much for your replies. I had purchased two cakes to take to a party I was invited to this evening, and I was worried that they would get stale if I didn't refrigerate them. I did not refrigerate either of them. I had some for dessert at the party and it tasted fine.
