Haven't tasted it yet, but the mozarella is easy!

It took 2 tries. Ordinary store bought whole milk was ultra pasteurized and would not curdle. Our home water is chlorinated. Neither are conducive to making cheese cultures grow.

But organic whole milk is not ULTRA pasteurized, just enough to kill the worst of the germs. And a purchased bottle of spring water didn't appear to contain any chlorine.

This was like doing a little science experiment in my kitchen, only took half a an hour, and I have fresh basil growing in my garden and some decent store bought tomatoes in my fridge. Caprese salad for lunch today (and tomorrow, and the day after that - this made a lot of cheese).

After a false start, it felt good to have a success on a Saturday morning.

I must be instructed in making mozzarella! A friend in Montreal prepared a mozzarella, peach and tomato salad for me and I want to make it next summer.

In the meantime, I have a boatload of other recipes for fresh M.

I made cheese once last summer... well, actually, I was knitting a sock while my friend made cheese.

Distilled H2O and some farmer's market fresh whole milk. it was good. the best part is that my h didn't want to eat any. ALL for me!

I'm glad you had success. Did you knead the curds? I mean, literally, not metaphorically...

I, er, squished them, when I added the salt, and then they very quickly got to where they wanted to be stretched, so I obliged. I didn't do it for very long or else I would have ended up with string cheese. Not a bad thing, but not what I was aspiring to.

My Carprese salad was yum for an early lunch. I believe I have enough ingredients left to make 28 more batches... maybe I will do mozzarella AND ricotta and then make a lasagna. (But not today, have already retired to the sofa with a magazine.)
