My diet

Is this a good plan?

Breakfast: Oatmeal, multi-vitamin, calcium chew

Lunch: 150 g romaine lettuce, 1 can salmon, 4 tbsp light Italian dressing

Dinner: 1 cup beans, 200 g broccoli, 1 calcium chew

Breakdown:
9 g fat, 111 g carbs, 28 g fiber, 48 g protein

Fat-Soluble Vitamins
250% RDA vitamin A
400% RDA vitamin D
28% RDA vitamin E
0% RDA vitamin K

What can I eat to make sure I get enough vitamin E and K? Do I need to worry about them? I know bacteria in our guts make vitamin K, is that sufficient?

Water-Soluble Vitamins
277% RDA vitamin C
375% RDA thiamin
280% RDA riboflavin
260% RDA vitamin B6
417% RDA vitamin B12
217% RDA niacin
265% RDA folate

I get enough of my water soluble vitamins, can I get too much?

Trace Minerals
108% RDA iron
0% RDA zinc
0% RDA selenium

Do I need to make sure I get zinc and selenium? What do I eat to make sure I get them?

Major Minerals
136% RDA calcium
26% RDA phosphorus
0% RDA magnesium
2952 mg sodium
0 mg potassium

Do I need magnesium and potassium? What should I eat to get them?

I'm trying to lose weight so I want to meet my requirements with as little food as possible.

I'm getting enough protein and fiber and most of my vitamins. Is this enough? Is my diet healthy enough? Is it sustainable?
