Gestalt therapy and Sandplay therapy

I need to know more about Gestalt and Sandplay therapy...My therapist wants to know what I want to work on this year...and we are going to work on anxiety and self esteem issues ...but how does Sandplay and Gestalt therapy work? I know that with Gestalt..you talk to an empty chair..and I really dont feel comfortable doing that...I have found myself carrying on conversations when im at home...pretending that I am talking to my therapist..when Im upset...and pretending that she responds to me...and i know that is kind of the same in gestalt but I dont want to do that in front of her...is that all that is involved in the therapy?? I dont know what other things there are...and Sandplay...I dont know if I could stand there and build a scene ....is it emotional for people? I dont have a problem becoming emotional...but, I have heard that Gestalt is pretty powerful...I just need to know more about what is out there...I need something to work on. How would a therapist go about working on Self Esteem or Anxiety..does anyone know some techniques? My therapist is into the works of Carl Jung..and so she does mandalas and sandplay and gestalt along with a lot of other types....but i dont know how it all works and I want to know of techniques that are availiable when working with someone that has anxiety and self esteem problems..is gestalt and sandplay therapy a good choice? What else is out there...
